Bodegas y Viñedos Tábula was created in 2002 with the goal of producing state grown wines that pay careful respect to the fruit and the terroir. Their intial property is a 22 hectare (55 acre) estate situated between Olivares and Valbuena de Duero, in Valladolid province. In 2010 Tabula acquired La Morejona, a 2 hectare (5 acre) vineyard with 60+ year old vines. In addition they control 20 hectares (50 acres) planted with 30 to 50 year old vines. Grape Varietals: Tempranillo 100%, from a 50 years old plot at over 930 metres (3000 feet) of altitude. Production: 1.520 Bottles Soils: Sandy clay upon calcareous. Wine-Making: Manual harvest using refrigerated trucks to bring the fruit to the winery. At arrival the bunches are sorted, de-stemmed and the berries sorted a second time. A cold soak of 4 days. Alcoholic fermentation in French oak vats. Malolactic fermentation in French oak barrels. Ageing: 14 months in 100% French oak barrel. and 5 months in a French oak foudre. Tasting Notes: Dense, backward, and structured, it has all the right stuff but patience will be required. Give it 6-8 years of additional cellaring and drink this currently brooding behemoth from 2017 to 2033.
