The fruit for the Single Vineyard País, Chile’s oldest grape variety, come from 50-year-old head-trained vines in Chilcas’ dry farmed Melozal vineyard located in the Maule Valley (124 miles south of Santiago and 12.5 miles from the Andes Mountain range). The valley is geographically diverse with a Mediterranean climate. Summers are warm and dry with a significant day-night temperature variation that promotes slow, even ripening as well as concentrated flavors, aromas, and color. Shoot thinning, leaf removal and cluster thinning are employed during the growing season to achieve optimal yields.
The grapes were hand-picked during the last week of April and immediately transported to the winery for sorting and gentle de-stemming. Next, the fruit was cold macerated for eight days followed by a warm, 18-day fermentation where punch downs took place three to four times daily. The wine was then aged for twelve to fourteen months in French oak barrels. The wine was naturally cold stabilized during winter and then earth-filtered prior to bottling.
The Chilcas 2010 Single Vineyard País has a delicate, translucent brick red color. Very intense on the nose, with aromas of black pepper and some earthy notes. This wine shows a voluminous palate, tremendous persistence and abundant soft tannins. Specially recommended for lamb, pork and game meats.
