This wine has the rich berry flavours and bay leaf character that is distinctive of Margaret River, one of Australia’s great Cabernet regions.
Varietal: 100% Cabernet Sauvignon
Region: Margaret River, Western Australia
Situated 280km south of Perth and surrounded by ocean on three
sides, Margaret River is one of the most reliable wine growing regions
in Australia. Nearly 100 kilometres long and 27 kilometres wide, the
region has a diverse range of soils and mesoclimates which ensure no two vineyards are the same.
Vine to Glass: Hot, dry conditions in summer gave over to milder
weather and chilly nights in autumn, which allowed slow ripening and
excellent flavour development in Cabernet fruit. This wine was grown
at four vineyards in the Wilyabrup, Carbunup and Wallcliffe sub-
regions. Harvest was in late March.
The must was fermented in overhead fermenters with pumping over and the wine was matured in a mix of old and new French oak barriques for 12 months.
Tasting Notes: This wine has complex aromas of dark berry fruits and cedar with hints of chocolate and bay leaf. On the palate are rich blackberry flavours complemented by a long, fine tannin structure.
Food match suggestion: Beef carpaccio.
