The Fuentes family establishes the Rio Negro winery at the end of the nineties, fulfilling their dream of elaborating a very unique wines and reviving the tradition of winegrowing in a town that had subsisted on this art for centuries. The 42 hectares (100 acres) vineyard sits at 1000 meters (3,300ft) above sea level, in Cogolludo (Guadalajara), in the foothills of the Sierra de Ayllón, next to the stone villages of the "Arquitectura Negra" (Black Architecture), surrounded by forests of oak, holm oak, pine and picturesque rolling hills, and 30 miles from any other vineyard. Wine Making: Dry wine produced from maceration at cold temperatures for twenty hours, and later devatting of the free-run juice. Fermentation takes place at 16oC and is aged in lees for four months.
