Reception: Line with vibrating tables / meticulously sorted by hand
Vinification: Small lot fermentation in thermo regulated stainless steel tanks with 5 days of cold soak
followed by alcoholic fermentation. MLF follows in barrel.
Maturing: An average of 18 months in Bordeaux -70 % are new barrels from a mix of world-class coopers
with an array of toast profiles.
The excellent aromas of violets and black currants. Vivid. Full body, round and silky tannins and along and polished finish. A wine with precision and tension. Less Cabernet Sauvignon in this year with more Cabernet Franc and a dash of Merlot.
Drink now, but better in 2020. JS
