The Vineyard: This little know Sonoma County growing region is just south of Santa Rosa and squeezed-in between the Sonoma Mountains to the south, east and west. It is a relatively cool area for the region with a strong influence from the Pacific Ocean in the form of cool winds and coastal fog throughout the growing season. Waxwing took the whole crop from the 2.2 acre vineyard in 2014 with yields being around 2.8 tons/acre. Winemaking: 100% of the fruit was crushed by foot whole cluster and fermented with indigenous yeast. Cold soak lasted for up to five days in assorted open-top fermenters. The tanks were vigorously punched down two to three time per day and primary fermentation lasted for one week at temperatures up to 94 F. The wine was aged in once-used and neutral French oak barrels for eleven months and bottled with a light filtration.
