Sourced from the higher elevations of our Estate grown vineyard above 600m (Orange appellation) “Climbing” wines exhibit intense flavors courtesy of lower yielding vines set on ancient soils, extremely cool nights and carefully nurtured viticulture. The Climbing range exhibit carefully added winemaking techniques to deliver complexity that layers the natural bright and elegant fruit character. The label is inspired by the higher elevation vines that give such a unique character and was drawn from an 1880’s Dive Circus poster with the dashing Henry scaling the heights inspired by the local extinct volcano peak, Mount Canobolas. BLEND: 100% Shiraz WINEMAKING: Crafted from selected parcels - blocks 51, 23, 17 and 16 - with each parcel handled differently. Block 23 we trailed whole bunch inclusion, with the most cold soaked on skins for 4 days prior to ferment kicking off. The other blocks, the fruit was de-stemmed, the must allowed to warm and some clocks kicked off ferment naturally, whereas others where inoculated with a Shiraz specific yeast. Post ferment the parcels were separately drained and the skins gently pressed with light pressings included. All parcels were then matured in French 225L and 500L barrels for 12 months. Post barrel maturation, extensive blending trails were conducted to come up with the most balanced blend. The final blend was then lightly egg white fined and filtered for bottling. WINEMAKER: Debbie Lauritz. B Ag. Sci. (Oen) APPEARANCE: Deep red with purple edges. AROMA: Plum, dark cherry and blackberry, with hints of spice, white pepper and dark chocolate notes. PALATE: The ripe berry and plum fruit characters continue on the palate, leading to a generous juicy mid palate weight. This is complemented by more savoury notes of black olive, leather and subtle oak. The palate is softly textured with fine even tannins running through the length of the wine. CELLAR: Up to 5 years. SERVE WITH: A perfect accompaniment to roast or barbecued red meats, duck and game, hard and blue cheese.
