Appellation: Red hen Vineyard located in the Oak Knoll District of Napa Valley Varietals: 100% Chardonnay See’s Close Chardonnay Fermentation: Native yeast and classic malolactic fermentation Aging: 11 months in 40% new French Oak and 60% 1 year old French oak Winemaker: Julie Lumgair Alcohol: 14.3 % Our grapes were hand-picked by the Red Hen Vineyard team cold at night and delivered to our winery before dawn. We gently whole cluster pressed the grapes at dawn to capture and preserve luscious fruit and bright acidity. The juice was then allowed to start with beautiful mix of native and classic fermentation in stainless steel until the fermentation gained strength, then completed the majority of fermentation in Burgundy’s finest French oak barrels. Our Reserve Chardonnay then aged sur-lie with batonnage and underwent secondary malolactic fermentation to further increase smooth body and fullness of palate. Reserve Chardonnay is aged exclusively in a rich toast and oak stave grain selection of Tonnellerie Françcois Fréres Burgundian barrels. The wine went through a diligent program of batonnage (stirring of the lees after fermentation) to complement the rich, lively fruit from the Red Hen Vineyard. Tasting Aromas of ripe citrus and tropical fruits meet confectionary and warm baking spice tones on the palate. Finishes up with balanced minerality and lush texture. Stylistically, this wine fills up a very large canvas!
