A lively and extremely fine mousse with delicate fruit flavors and a leesy backbone. The finish is light, fresh and lingering. Not only is this wine a great representation of South African Methode Cap Classique (MCC is the term used to indicate sparkling wines made in the traditional Methode Champenoise style), but it is also the only Kosher MCC made in South Africa. After the berries have been crushed and the juice released, all handling of the wine is performed by a supervisor from the Cape Town Beth Din. It starts with a fresh, low alcohol Chardonnay base wine that is flash-pasteurized prior to fermentation. After the first fermentation, the wine is bottled and the secondary fermentation occurs in bottle. The wine stays on the lees for roughly 12 months before being disgorged and packaged. The 2016 Brut MCC is Mevushal and Kosher for Passover, and is made under the auspices of the OU and the Cape Town Beth Din.
