Manually harvested at phenolic ripeness then crushed, destemmed and pressed using the very best monitoring and production technologies to maintain purity. The wine then settles, is racked off, and cultured yeasts are added. The wine rests in controlled cold fermentation at 16°C. Fermentation is followed by further racking, and the wine is kept on fine lees with regular batonage. The finished wine is kept in airtight and temperature controlled barrels and bottling is carried out several times a year in order to ensure an always fresh product. The wine is stabilized and bottled in sterile conditions following aseptic filtration. Giol is the oldest bonded winery in Italy, registered in 1427, and has been organically farming since 1986.
