“Sensai” is a Japanese word for elegance, subtlety, and delicacy. It is used to express true Japanese cuisine. It can be fragile but holds the essential balance. Our ultimate goal for NORIA brand is to produce the wine that is “sensai”. Michael Valentine Vineyard is located in the Freestone area of Russian River Valley AVA and it is the coolest vineyard spot in Northern California. The vineyard has a potential to produce our dream wine. Pinot Noir from this area is completely different from any other. It is pure and sensible. We source Dijon clones (777/667) from Michael Valentine Vineyard in the Freestone area of RRV. Berries are small and look like black pearls. After 7 days of cold soak, whole berries are fermented in both an open top fermenter and new barrels (100% native yeast). It is aged in 100% French oak (70% new) for 14 months.
