With subtle elevation changes and an east-west orientation, this 35-year old block is farmed to yield between four and five tons to the acre. Tasting Notes: Don’t judge this book by its cover! Dominated by aromas of strawberry, white pepper and herbaceousness (thanks to some whole-cluster ferment) - this is unlike any Garnacha you’ve ever had. Make no mistake, this is a full-on red wine that delivers unexpected notes of black cherry, honey and subtle oak. Soft tannins and just enough acidity help to keep everything in balance. Pairing Ideas: At the risk of being overtly cliché, this wine is a perfect match for paella. Its bright fruit and hint of tartness work quite well with the richness of the chorizo and the floral aromas of the saffron. And if you happen to like things a little on the spicy side, chill it down and try it with a tasty Thai green curry.
