At Hillersden, our goal is to produce Sauvignon Blanc reflective of the unique terroir in Upper Wairau Valley. Vineyard Notes: 91% of this blend is from our young vine Shalev vineyard. This fruit showed all the vitality of youth with bright yellow fruit and delicious acid. The soils are a mix of alluvial and glacial gravels interspersed with clay and sandy loams. Yields were low at 10 tonnes per hectare so the grapes had concentrated flavour and packed a real punch. The fruit was picked just before Marlborough was hit by multiple tropical Cyclones. The other 9% came from our oldest vines on Tirosh vineyard – just across the road. Topsoils here are extremely stoney, rocky and free-draining. Both Shalev and Tirosh parcels were nearly fully exposed to sunlight. We are finding more and more that this is a defining feature for our Sauvignon Blanc style. Since the Upper Wairau is a cooler, wetter sub region of Marlborough our best tool is an open canopy – especially in a year like 2017. This allows airflow to dry out humidity for natural disease prevention. But it also means sunlight penetration and heat which shapes the flavour of our fruit. Pyrazine compounds responsible for the bell pepper found in typical Marlborough SB are broken down by the extra UV light. And the added heat brings yellow fruits and tropical flavors. This supports the old saying – great wine is made in the vineyard. Winemaking: We always celebrate the freshness of our wines - defined by fruit plus acidity. But we also appreciate balance and complexity. 2017 delivered no shortage of the former. To find the balance and complexity 6% of the harvest was pressed into older French oak barrels – 225L, 400L and 500L. We allowed half of these barrels to ferment with wild, indigenous yeast from the vineyard. Post ferment we tasted the wines daily until just the right texture was found to compliment the freshness and brightness of the fruit. The remainder of our grapes were pressed carefully to stainless steel tanks where the juice spent three weeks fermenting at cool temperatures. Post ferment we allowed the wines to rest on yeast lees for a prolonged period to take advantage of the natural benefits of autolysis – mouthfeel and natural antioxidant protection. No fining agents other than bentonite clay were used in the making of this wine so it is vegan friendly and gluten free. It is immensely enjoyable now but unlike most other Marlborough Sauvignon Blanc ours will be suitable to age for a few years. 1330 cases
