Our Chardonnay was selected from one block of Dijon clone 76 from the Escolle Vineyard in the Santa Lucia Highlands. Chardonnay is a great white varietal, you can make sparkling wine from it, let it ripen some more and then get a crisp clean version of a Burgundian classic. Let it hang in California sunlight, we get a much different wine. Picked mid September 2017, 23.8 brix at harvest. Not underipe, not overipe, a nice fresh fruit character of peach, guava and citrus. Picked at night and pressed first thing in the morning, we settled the juice in tank for 48 hours prior to racking the juice to 3rd fill Chardonnay barrels. We fermented the juice in barrel with 3 different yeast strains, creating different flavors in each barrel. The crisp and bright burgundian acidity won't let you believe this is 100% malolactic frementation, we use a special technique that allows us to fement the Malic acid and create the rich mid palate with a bright acidity only found in European wines. Stirred every 2 weeks by hand, the sur lie aging adds to the richness of the wine. Bright and fruity...this wine pairs well with seafood and hard cheeses, pastas and mediterranean dishes.
