VINEYARD: 
The Cinsault fruit comes from a vineyard located in the western part of Itata Valley, 13 miles from the Pacific Ocean and 310 miles south of Santiago. This valley has a long winemaking tradition that dates back to colonial times and a wealth of small, sustainably farmed old vines. Poor granite soils and the moderating influence of the nearby Humboldt Current allows grapes here to ripen slowly with good concentration of flavor. Chilcas Cinsault comes from 55-year-old un-grafted, head pruned vines that are dry farmed.

WINEMAKING:
The grapes were hand-picked during the last week of March. The bunches were destemmed, but not crushed, before being deposited into 13-ton closed-topped stainless steel tanks for fermentation. Once completed, the wine was racked to barrels where it underwent spontaneous malolactic fermentation over two months and matured another two months prior to bottling in October 2014.

TASTING NOTES:
The Single Vineyard Cinsault shows a purplish red ruby color. On the nose it has intense floral aromas and notes of red fruits such as cherries and ripe strawberries. The palate shows juicy and fresh primary fruit flavors, a good structure and soft, well rounded tannins. It will pair well with light, savory dishes and is at its best lightly chilled.
